Friday Forage 4/12/19

Alright so it's Friday and I have a lot going on today... of course I have my ME time - which I enjoy so much, bopping around without kids and exploring food options and stores, showcasing places that sell things that make living a Ketogenic lifestyle easier. So, plan on heading to 360 Sugarfree, which is my normal HAVE TO... I am surprising my son and being a guest reader in his class at 9:30AM, which I'm happy to see his reaction, as he has completely NO CLUE that I am coming in. So that's exciting.


Rich wants me to go play in the woods with him, he's OBSESSED with our property and the fact we own so much land, so it's a dumb priority of his to make sure he knows the parameter - but he tries to rope me into the exploration and gets all in a tizzy that I have other things to do besides walk our property 40xs a week. If I want to hunt, sit in my tree stand, hike, or play with the kids - I'm out there, but to obsess over the property lines, not my thing. HAHAHA Cracks me up, he's such a passionate country boy - absolutely adorable. He gets stuck on one detail and needs "support" hahaha oh man I adore him and his quirks, but Momma has other things to do - especially on my one day a week I get to be kidfree.


So, there is no sunshine, it is supposed to be mild in weather but I don't see the sun peaking through - which I hope is just cause the morning hasn't gotten kicking yet. It's still early, but days feel so much better when the sun is shining and birds are singing... Spring is on it's way, I am keeping that positive flow working in full force.


I just made coffee, so that should help me perk up a bit. I stayed up a bit later than normal, looking at a few recipes that I will be trying out this weekend and will share if I "approve" them!! Been super busy this week with the kids, work, and house- fitting in time to share a peak into my world but I've been doing behind the scenes kitchen work- which I will share with you guys soon!! LOTS in my vault.


SO... only going into work for 45mins today, have a few things to do, headed to the school for my son and then OFF and running... What to make for dinner? I could probably eat salad everyday, but I doubt my kids agree with this one. They like salad and they eat it at least 2xs a week for dinner - now mind you it's never iceberg lettuce and plain ingredients, I love LOADED salads with cooked veggies, various protein sources, and new flavors - but they really like protein based dinners. That mac and cheese I made the other day (with cauliflower not pasta) was AMAAAAZING and no one even knew it was not made with pasta... oh em gee - that is a keeper and it was super easy to make.


I don't need too much to restock my supplies this week, need to restock produce for sure and get the kids more fruits to snack on (they love blueberries and strawberries) so we always have them in abundance. My daughter has a huge raspberry passion but its hit or miss with her whether or not she finishes the container each week - sometimes its gone in two days and others she doesn't touch it... CRAZY.


One of my subscribers asked me what I buy weekly - which I can say for the most part it changes depending on what I had left over from the week before. But staples in my life are simple and i make sure I have some basic ingredients on hand at all times, as it helps me keep on my goals. I keep broccoli, celery, mixed greens, kale, frozen riced cauliflower, natural hotdogs, pepperoni, basque cheese, cream cheese, almond milk, asparagus and limes in the house at all times. Those are my always haves... from there I switch up our proteins, so sometimes we have ground beef, pork chops, chicken thighs, bison steaks, venison... it changes depending on the weather and my mood. Sometimes they will be a meal based on the protein - or sometimes they will be incorporated into a salad. I have salad mostly once a day out of choice, cause I love it so much - but that's just me... I really love how filling it is and it has so many various flavors in it, I really enjoy the tastes.


If I want to eat tacos, I make cheese taco shells. If I want a pasta dish, I will use shirataki noodles or the GLC pasta that I put on my page. If I want to snack, I make a dip of some high fat content and enjoy with pork rinds or cauliflower crackers. I always have sweets on hand, so keto cookies, bars, or cakes of some sort are a MUST... I have fat bombs in the freezer at all times and it helps me when i haven't eaten much all day an need to get some fats in OR I want to have something before I head out so I have no desire to grab something in a pinch. So often I read of people caving and having fast food or food that doesn't fit their fitness plan while out and about - I guess I avoid that cause being so fat adapted I don't get HUNGRY often - but furthermore I always have something Keto in my bag on hand so I have no excuse. :)


You will hear me say it 3000000xs, do whatever you are most comfortable with to stay on the path and keep Keto a lfestyle instead of a diet that will really catch up with you when you get off ketosis. Do what makes you happy, don't let anyone tell you what to consume or make you feel bad for your choices. Eat and enjoy life, it's too short to feel so restricted you give yourself anxiety!! :) Plan ahead and be conscious of your consumption!!
